Shrimp Fried Rice – All Phases

Ingredients: 

  • 2 cups raw cauliflower
  • 2 tsp. olive oil
  • ¼ cup finely diced red bell pepper
  • 4 Tbsp. thinly sliced scallion (reserve 1 Tbs. for garnish)
  • 4 oz. cooked shrimp
  • ¼ tsp. minced garlic
  • 2 Tbsp. soy sauce (low sodium)
  • 2 large eggs beaten
  • Salt and pepper to taste

Directions:

  • Grate the fresh cauliflower using the largest holes of a cheese grater
  • Heat the oil in a large skillet over medium/high heat
  • Add the bell peppers & sliced scallions & cook for 1 minute
  • Add in cauliflower, shrimp & garlic
  • Cook stirring constantly for 4–5 minutes until cauliflower is tender
  • Add soy sauce & stir
  • Add the eggs to one corner of the pan but do not stir for one minute. As soon as the eggs are soft-cooked, remove the skillet from the heat and gently fold the eggs into the mixture
  • Add salt and soy sauce to taste
  • Garnish with green onion
