Thai Steamed Mussels
Serving size: 2
Count: 6-8 oz. dinner protein, 1 tsp. olive oil
(Note: 11lb. of mussels = 6-8 oz. dinner protein)
- 2 tsp olive oil
- 1 cup Low-Sodium Chicken Broth
- ¼ cup minced shallots
- 4 medium garlic cloves, minced
- 1 small bay leaf
- ½ tsp curry powder
- 2 lbs mussels, cleaned & debarred
- 1 Tbsp chopped fresh cilantro
- 1 Tbsp chopped mint
- 1 Tbsp chopped fresh basil
Directions:
First, start by clean mussels and set aside. In a deep pot heat olive oil then add shallots, garlic, bay leaf, chicken broth and curry powder. Cook for about 3 minutes then add mussels. Place a lid on the pot and let the mussels steam for about 2 minutes. Stir occasionally then cook for another 3 minutes or so. Remove mussels from the pot and place in a large bowl and cover with foil. Add fresh herbs to the liquid in the pot and let simmer for about 1 minute. Then pour over mussels and enjoy!
