Two Minute Shrimp Scampi

Serving size: 1

Count: 8 oz. dinner protein, ½ cup select vegetables, 1 tsp. olive oil

  • 8 oz. large frozen shrimp (peeled and deveined)
  • ½ cup spinach leaves, chopped
  • 1 tsp olive oil
  • 1 clove garlic, crushed
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes

 

Directions:

In a large microwaveable bowl, mix all the ingredients together, tossing well to coat the shrimp.  Microwave for 1 minute.  Remove and toss well again.  Microwave for 1 minute and 15 seconds more.  Sprinkle mixture with red pepper flakes and enjoy!
