Chocolate Zucchini Cookies
- IP Crispy Cereal
- IP Chocolate Drink Mix
- 2 egg whites
- 2 cups shredded zucchini
- 1 tsp baking powder
- 1 ½ tsp olive oil
- 1 pack of Splenda or Stevia
- Dash of cinnamon
- Dash of sea salt
- 1 tsp vanilla extract
Directions: Preheat oven to 350 degrees. Use the rolling pin and gently crush the IP Crispy Cereal while still in the unopened package. Mix all ingredients together except the zucchini until thoroughly mixed. Next, shred the zucchini and be sure to blot dry with a paper towel. Add the shredded zucchini to the mixture. Spray a non-stick muffin pan with non-stick spray and evenly add the mixture to make 10-12 cookies. Place in oven for 12-15 minutes. Let cool, then enjoy!
