Key Lime Tarts:

  • 5 packets of True Lime flavoring
  • 1 Ideal Protein Vanilla Pudding
  • 1 Ideal Protein Maple Oatmeal
  • 3 egg whites
  • Non – stick spray
  • Splenda


For the Filling: drop 1 tsp. of True Lime flavoring into 3 oz. of water, add Splenda to taste (should be sweet but tart).  Add vanilla pudding, mix until smooth. Cover and refrigerate.

For the Crust: Preheat oven to 350 degrees.  Mix Maple Oatmeal, one egg white and 1 ½ oz. of water. Stir until a stiff but manageable dough farms.  For Meringue:  Beat two egg whites until stiff peaks form.  Lightly coat a muffin tin with non-stick spray, moisten hands and with 2-3 tsp of dough, roll into balls.  Place one dough ball into each baking cup.  Press ball down and make as thin as possible to cover the tin and form a cup.  Bake for about 5 minutes.  Cool on a wire rack.  Take key lime filling out of refrigerator and stir in one packet of True Lime flavoring.  Place filling into crusts and top with a small dollop of meringue.

Count: depends on how many tarts you make…if you eat ½ of the tarts it would be
