Cauliflower Mashed “Potatoes” Recipe – All Phases

  • 1 head cauliflower (break up into small pieces and measure to get cups)
  • 1 clove garlic
  • 1 pinch of chopped chives
  • 1 Ideal Protein Leek or Mushroom Soup
  • Salt and pepper to taste

Directions: Break cauliflower into small pieces. Steam the cauliflower and garlic clove until completely tender, usually about 15-25 minutes. While it’s still hot, puree until the vegetables resemble mashed potatoes. A food processor will save a lot of time and effort! Add a little hot water if the vegetables seems dry. Add the packet of the Leek or Mushroom Soup to the mix, then stir in garlic powder and pepper to taste.
