Shrimp Fried Rice – All Phases
Ingredients:
- 2 cups raw cauliflower
- 2 tsp. olive oil
- ¼ cup finely diced red bell pepper
- 4 Tbsp. thinly sliced scallion (reserve 1 Tbs. for garnish)
- 4 oz. cooked shrimp
- ¼ tsp. minced garlic
- 2 Tbsp. soy sauce (low sodium)
- 2 large eggs beaten
- Salt and pepper to taste
Directions:
- Grate the fresh cauliflower using the largest holes of a cheese grater
- Heat the oil in a large skillet over medium/high heat
- Add the bell peppers & sliced scallions & cook for 1 minute
- Add in cauliflower, shrimp & garlic
- Cook stirring constantly for 4–5 minutes until cauliflower is tender
- Add soy sauce & stir
- Add the eggs to one corner of the pan but do not stir for one minute. As soon as the eggs are soft-cooked, remove the skillet from the heat and gently fold the eggs into the mixture
- Add salt and soy sauce to taste
- Garnish with green onion
