Smothered Eggplant – All Phases

Serving size: 1

  • 1 ½ cups sliced eggplant
  • ½ cup chopped tomato (optional)
  • ½ cup sautéed mushrooms (optional)
  • ¼ cup Walden Farms Tomato Basil Sauce
  • 2 tsp. olive oil
  • ¼ cup Veggie Mozzarella cheese

Directions: Saute thin sliced eggplant in 1 tsp. olive oil.  Place in a small ovenproof pan or dish.  Saute sliced mushrooms and chopped tomato in 1 tsp. olive oil.  Mix in WF Tomato Basil Sauce.  Place mushroom, tomato and Tomato Basil Sauce over eggplant.  Sprinkle with ¼ cup Veggie Mozzarella cheese.  Bake at 350 degrees for 15 – 20 minutes.

 

Count: 2 cups occasional vegetables, ½ cup select vegetables, 1 serving Walden Farms, 2 tsp. olive oil, 1 oz. protein
