Cauliflower Roux: All Phases
- 1 head of cauliflower (measure your cauliflower heads to determine serving size)
Steam Cauliflower until tender. Reserve ½ cup of the water used to steam the cauliflower. Puree the cauliflower in blender with the reserved water. This roux can be used to thicken any recipes. For example use it to thicken the sauce of a stir fry.
