Kale Chips – All Phases

  • Bunch of Kale
  • 2 tsp. olive oil
  • 1 tsp. sea salt

Directions: Line a non-insulated cookie sheet with parchment paper or foil.  Remove Kale leaves from thick stems, wash and dry in a salad spinner.  Drizzle olive oil on kale & season.

Bake in oven on 350 degrees for 10 – 15 mins.  Watch carefully so they don’t burn.

Serving size: 1

Count: Select Vegetables (measure before putting on cooking sheet to get amount)

2 tsp. olive oil

1 tsp. sea salt

 

Salsa – All Phases

  • 1 cup green or red pepper
  • 1 cup tomatoes, chopped
  •  1 cup diced cucumber
  • ¼ cup minced red onion
  • 1/4 cup cilantro, chopped
  • 1 tsp. lemon juice
  • 1 jalapeno pepper minced (small pepper)
  • 2 tsp. sea salt

 

Directions: Mix together, refrigerate.

Serving size: 4

Count: ½ cup + 2 Tbsp. Select Vegetables

¼ cup Occasional Vegetables

½ tsp. sea salt
