Roasted Cauliflower

Pan Roasted Cauliflower – All Phases

Serving size: 1

  • 1 head cauliflower (measure before cooking)
  • 1 tsp. olive oil
  • ½ tsp. sea salt
  • 5 cloves garlic
  • Zest of 1 lemon

Directions:  Cut your cauliflower into small pieces. Heat the olive oil and salt in a skillet over medium-high heat.  When hot, add the cauliflower and stir until the florets are coated.  Brown until the cauliflower is deeply golden, about 6 minutes.  At the end, stir in garlic.  Remove from heat and stir in seasonings. Chives, basil, and rosemary are good choices.  Add lemon zest.  Serve immediately.

 Count: Select Vegetable (amount depends upon measurement), 1 tsp. olive oil, ½ tsp. sea salt
