Ceviche

Ceviche – All Phases

Serves: 3

  • 1 lbs Shrimp
  • ½  lb of white fish (you can use just fish, just shrimp or a combination of both)
  • ¾  cup tomato, diced
  • ½ cup green pepper chopped
  • ½  cup chopped onion
  • Clove garlic chopped
  • 3 large limes
  • 1 small lemon
  • Chopped parsley

 

Finely chop the garlic and mix with the salt. Add the garlic to the lemon and lime juice, along with any optional extra flavors you desire such as basil, fennel tops parsley or dill. To finish, season to taste with the sea salt and freshly ground black pepper.  Marinate shrimp/fish, tomato, pepper and onion in the above marinade overnight or for 8 hours.

Count: 8 oz. protein, 1/3 cup select vegetables,  ¼ cup select vegetables
