Turkey or Chicken Meatballs with Tomato Basil Sauce:

 Serving size: 4

Meatballs:

  • 20 oz. ground turkey or chicken
  • 2 oz. turkey sausage
  • 1 egg
  • ½ cup zucchini shredded
  • 1 Tbsp. minced garlic
  • ¼ cup green pepper
  • 3 Tbsp. chopped fresh basil
  • 3 Tbsp. chopped fresh parsley
  • Salt & Pepper Italian seasoning

 

Tomato Basil Sauce:

  • 3 ½ cup Hunts crushed Tomato & Basil (sold in a can)
  • ½ finely chopped fresh tomato
  • 2 Tbsp. Chopped garlic
  • ½ cup red pepper, chopped
  • 1 Tbsp. chopped fresh basil
  • ½ cup fresh parsley
  • ½ tsp. crushed red pepper
  • 2 packages of Splenda

 

Tomato Sauce Directions:

  1. Sautee peppers and garlic
  2. Add sauce, basil, parsley, salt and pepper
  3. Let simmer on low, stirring frequently

 

Meatball Directions:

  1. Preheat oven to 350 degrees
  2. Spray PAM on baking pan
  3. Mix all ingredients together (it will seem wet) & form meatballs and place on baking pan
  4. Bake for 25 minutes
  5. Let meatballs simmer in sauce for 20 minutes

 

Total count:  

6 oz. protein, ½ cup select vegetables, 1/8 cup occasional vegetables
